Hi everyone!

Law 12:
“A goalkeeper is considered to be in control of the ball with the hand(s) when:
  • the ball is between the hands or between the hand and any surface (e.g. ground, own body)”

Does this mean if the keeper puts one hand on the ball then it is under his control and it would be a foul for an attacker to take it?

Yes. This is where the perception around keepers being protected comes from.
Once he is touching the ball, he is considered to be in control, thus he cannot be challenged for the ball which is why you see, what the layman considers, "soft" free kicks awarded to GKs so much.
