If the ball hasn't left the FOP, it's play on although if the ball has left FOP then it's a retake. It doesn't matter where the ball is projected to land, in my opinion of the ball left the FOP and the wind blew it out (however narrow it was), it's a throw to opposition.
First impressions count however it isn't worth the investment if you decide to stop refereeing after a couple of games (you'd be surprised how common this is). I'd suggest you do your first 5 in what you describe, keep the match fee's and if you're still interested in refereeing afterwards us...
In regards to number 4, I'd have kept play stopped until the player was in a tactical position - the point of a substitution is to gain tactical advantage over the opposition, not the opposition to gain an advantage over you (assuming it did cause the goal).
