Think obviously in the WC we had a VAR, SVAR and AVAR with 2 referees and 1 assistant. So my guessing is we can have 2 referees as VAR and AVAR respectively.

Not sure I've seen any examples of it before though
 
Yes. ARs are now also acting as VAR. I believe it's part of PGMO's new Specialist VAR pathway. More officials have been specifically trained on VAR use when not necessarily SG1 officials, or they are but are doing it anyway. I'm happy to be corrected by someone with more knowledge if this isn't right though!

Wha I’ve seen is the other way round. Referees acting as AVAR

Apologies, I should have made myself more clear. I've seen both already this season. Neil Davies was VAR for Spurs vs Burnley last week, and Tim Wood was VAR for Brentford vs Villa yesterday.
 
There was also previously a rule that to be VAR on a premier league match you had to have officiated a premier league match on field, but that has now been scrapped.
There’s a few national list referees getting VAR / AVAR gigs
