They're not looking for sympathy, they're looking for the FA to deal with events and assaults correctly. To be honest, the police could've been included on this incident, because of how aggressive the attack was. If the SFA dealt with this incident correctly, then we wouldn't be having this conversation.
For how long would they strike? Obviously they do not just strike, they attempt to resolve the problem with the SFA, because the SFA in this incident has drawn a line if you like, separating officials and the SFA. If the problem can't be resolved, then they could strike for a weekend. It would cause an upset, because if no officials could be brought in, then the game couldn't be played. That would be many many unhappy fans, coaches, players, and a massive headache for the FA. It would show them how important the officials are, and maybe they should actually impose correct sanctions.
