Someone on here recommended "Against the Rules" recently - it's fairly new so there aren't loads of episodes, and not football-specific as I think the guy that does it has a background in baseball. But it's very focused on what it's like to be the man in the middle and I've found the couple of episodes I've listened to so far very interesting.
The My Life on the Line podcast from the RefCoach group out of Australia is generally really good. They talk with referees, but also with some outside of soccer/football refereeing. The podcast with broadcaster Derek Rae was particularly good.
